Method
Prepare the salad: Remove the rind from the watermelon and cut it into chunks. Place the watermelon chunks in a large serving bowl or on a big serving platter. Add the pomegranate seeds and torn mint leaves to the watermelon. Toss them together gently.
Add the feta cheese: Crumble the feta cheese over the watermelon, pomegranate, and mint mixture.
In a small bowl, whisk together the olive oil and balsamic vinegar. Drizzle the dressing over the salad. Season with a generous grinding of black pepper.
