- 50g pomegranate seeds
- 1 lemon, for juice & zest
- 2 tsp honey
- 2 tbsp olive oil

This healthy chicken spinach pomegranate salad is packed full of flavour & goodness.
Method
Grill the chicken on a grill pan, about 8 minutes per side, until browned and cooked through.
Meanwhile, combine the olive oil, lemon, honey for the dressing ingredients and season to taste.
Put the chicken, spinach and pomegranate seeds in a salad bowl or plate, and drizzle with dressing. Toss well and serve.
